Baked Ratatouille Baguettes
Prep Time: 10 Min
Cook Time: 15 Min
Total Time: 25 Min
Serves: 2
Ingredients
50 g unsalted butter
1 small garlic clove
4 small uncooked baguettes (about 15 cm long) 1/2 small aubergine
1/2 medium sized courgette
1 medium sized tomato
4 tbsp Our Tomato Sauce
1/2 Mozzarella ball
Pinch of oregano
Olive oil
Instructions
- Finely grate garlic and mix with butter
- Slice the aubergine, courgette and tomato into 8 slices (about the thickness of a £1 coin), then cut each slice in half.
- Cut out a V-shape piece out of each baguette in 4 places, 3/4 way through, then fill in the cuts with garlic butter.
- Tuck sliced vegetables into the baguette (1piece of each vegetable per cut)
- Place baguettes on the tray lined with baking paper, put into pre-heated oven, 180 degrees Celsius, bake for 10 minutes, then take the baguettes out, pour over 1 tbsp of Our Tomato Sauce per baguette, tear the Mozzarella over the top and put back in the oven for another 5 minutes.
- Take out of the oven, drizzle with olive oil, sprinkle with oregano and tuck in!
Notes
Keep those V-shaped pieces of baguette for your bread crumbs (dry them out in the oven on a very low heat, them whizz them in a blender for a couple of minutes)
