Baked Ratatouille Baguettes

This recipe for Baked Ratatouille Baguettes is a quick and easy snack to keep your hunger at bay!

Whether it’s a friend or family visit, party snack or you’re just feeling like having something else for lunch – this is perfect!

This recipe also uses one of our other recipes, Our Tomato Sauce.

Baked Ratatouille Baguettes

Ingredients

50 g unsalted butter
1 small garlic clove
4 small uncooked baguettes (about 15 cm long) 1/2 small aubergine
1/2 medium sized courgette
1 medium sized tomato
4 tbsp Our Tomato Sauce
1/2 Mozzarella ball
Pinch of oregano
Olive oil

Instructions

  1. Finely grate garlic and mix with butter
  2. Slice the aubergine, courgette and tomato into 8 slices (about the thickness of a £1 coin), then cut each slice in half.
  3. Cut out a V-shape piece out of each baguette in 4 places, 3/4 way through, then fill in the cuts with garlic butter.
  4. Tuck sliced vegetables into the baguette (1piece of each vegetable per cut)
  5. Place baguettes on the tray lined with baking paper, put into pre-heated oven, 180 degrees Celsius, bake for 10 minutes, then take the baguettes out, pour over 1 tbsp of Our Tomato Sauce per baguette, tear the Mozzarella over the top and put back in the oven for another 5 minutes.
  6. Take out of the oven, drizzle with olive oil, sprinkle with oregano and tuck in!

Notes

Keep those V-shaped pieces of baguette for your bread crumbs (dry them out in the oven on a very low heat, them whizz them in a blender for a couple of minutes)
