A couple of weeks ago we’ve posted a recipe for Ratatouille and since then a lot of you food lovers have asked us about ideas for recipes with Ratatouille.
We’ve already shared with you our Mediterranean Pie with Ratatouille recipe, now it’s time for another one! This week it’s Vegetarian Stuffed Flat Mushrooms with Ratatouille, Lentils & Fried Egg. Sounds simple, and in fact it is! It works in many different ways: starter, party snack, side dish; it’s all down to your imagination 🙂

Vegetarian Stuffed Flat Mushrooms with Ratatouille, Lentils & Fried Egg

INGREDIENTS
- Quarter of a batch of Our Ratatouille
- 4 large flat mushrooms
- 4 tbsp olive oil
- 60 g cooked lentils
- 4 small eggs
- Sea salt
- Freshly cracked black pepper
- 1 tbsp freshly chopped flat leaf parsley
INSTRUCTIONS
- Cook ratatouille according to instructions, but with one difference: cut vegetables really fine.
- In the meantime peel mushrooms and cut the stems out (see notes).
- Place mushrooms top side down onto a baking tray lined with baking paper, drizzle with olive oil and bake in a pre-heated oven, 180 degrees Celsius, for 2 – 3 minutes, then take them out.
- Once ratatouille is cooked, take it off of the heat, add lentils and mix together. Spoon a quarter of the mix into each mushroom.
- Create a well in the middle of the mix, crack an egg into each one, season lightly with salt and pepper and pop back in the oven for 6 – 8 minutes. This amount of time is enough to cook the whites and keep the yolks runny.
- Take stuffed mushrooms out of the oven, transfer onto a platter or individual plates, sprinkle with chopped parsley and eat while hot!
NOTES

- Mushroom peelings and stems can be chopped up and added to ratatouille along with the vegetables.
- If you prefer your eggs cooked through, cook in the oven for extra 5 – 6 minutes.
- This recipe can easily be multiplied when in need of a fantastic party snack!
