It’s me, Mario!
This week we are going to make a Mediterranean Pie.
For this dish we’re going to use one of our previous recipes, Ratatouille.
This Mediterranean Pie is easy to make and takes only a little time to prepare, but the result is very tasty! It is a great vegetarian or vegan meal (if you get yourself a vegan puff pastry), but it can easily be adjusted to your personal preference, for example with an addition of your favourite veg, nuts or seeds, or even meat.

Mediterranean Pie with Ratatouille

Cook time: 20 minutes

INGREDIENTS
- 1 batch of our Ratatouille
- 150 g puff pastry
- 120 g chickpeas
- 140 g sweetcorn
- 1 enamel dish [approx. 24 cm (L) x 18 cm (W) x 6 cm (D)]
- Flour for dusting
- 1 egg for egg wash/for Vegans: olive oil
INSTRUCTIONS
- Cook our Ratatouille according to the instructions.
- Add chickpeas and sweetcorn to Ratatouille, mix well and transfer into the enamel dish, level the mix with the back of the spoon.
- Dust working surface with a little flour and roll out puff pastry to half a centimeter thick rectangle (as big as your baking dish).
- Cover the baking dish with puff pastry, cut off any excess pastry round the edges, then gently press the edges to seal the pie.
- Score pastry with a fork (this will help release the steam and stop the pastry from bursting).
- Beat the egg with a whisk, then give the pastry egg wash using a small brush. For Vegans: brush the pastry with olive oil.
- Bake the pie in pre-heated oven, 190 degrees Celsius, for approx. 20 minutes, or until golden brown.
- Enjoy while hot 🙂
NOTES

- Feel free to spice the ratatouille filling up or add more of your favourite vegetables!
- This recipe can be multiplied and cooked in a bigger baking dish, but please remember to adjust the cooking time slightly.
