ENSALADA DE SALMÓN AHUMADO

Smoked Salmon is widely used in cooking, for example in pasta sauces, scrambled eggs (for breakfast) or pâtés for your toast. But it’s also great served in canapés or salads.

My Ensalada de Salmón Ahumado is a very easy salad to make. The crunchiness of the ingredients make this salad very refreshing and the depth of smoky flavour of smoked salmon is absolutely mouth-watering. It’s great as a starter, as a side or even, when made in larger portion, as a quick meal when you’re on the go 🙂


ENSALADA DE SALMÓN AHUMADO

INGREDIENTS

  • 120 g smoked  salmon
  • 14 black olives, pitted and halved
  • Quarter of cucumber, thinly sliced
  • Half a red onion, thinly sliced
  • 2 whole leaves iceberg lettuce
  • 2 tbsp olive oil
  • Juice of half a Lemon
  • 6 cherry tomatoes, cut into quarters
  • Sea Salt
  • Freshly cracked black pepper
  • Flat leaf parsley to garnish

INSTRUCTIONS

  1. Place half of olives, half of cucumber and all of the red onion in a bowl, drizzle with 1 tbsp of olive oil and all of the lemon juice, season with salt and pepper, then give it a gentle mix.
  2. Grab two plates and place an iceberg lettuce leaf on each one. Arrange cherry tomatoes and the rest of cucumber slices around the lettuce leaves.
  3. Put half of the salad mixture inside each of the lettuce leaf.
  4. Tear smoked salmon into small pieces and put half of it onto the salad mixture inside the lettuce leaves.
  5. Drizzle with remaining olive oil, garnish with parsley and it’s ready!

NOTES

Ensalada de Salmón Ahumado
  • If you want to spice it up a bit, you can use chilli oil rather than olive oil.
  • Smoked salmon and olives have high salt content, so before seasoning anything, taste the salmon and olives – this will give you the idea of how much or how little salt you need to season the salad.
