Hi everyone! In this post I’m going to show you another of our fantastic sweet treats.

It is a dessert in which the sweetness of our Butterscotch Sauce with basil meets with a slightly bitter taste of cocoa powder, finished with fresh bananas. We’re also going to do something called ‘edible soil’ – it’s very easy to make, it’s basically a dark in colour crumble mix, hence the name. The edible soil can be used in many dessert recipes, such as pies or as an extra texture and flavour or even for presentation purposes.

Banane con Caramello e Basilico


Prep time: 5 minutes + cooling time

Cook time: 7 minutes

Total time: 12 minutes + cooling time

INGREDIENTS

  • 100 ml of our Butterscotch Sauce
  • 5 g fresh basil leaves
  • 2 bananas
  • Vanilla ice cream or whipped cream

FOR EDIBLE SOIL

  • 40 g porridge oats
  • 30 g dark brown soft sugar
  • 30 g soft butter
  • 2 tsp cocoa powder

INSTRUCTIONS

EDIBLE SOIL

  1. In a bowl, combine all ingredients together with your fingers to create crumble mix.
  2. Lay baking paper on a tray and spread mix onto it.
  3. Bake for 6-7 min in pre-heated oven, 180 degrees Celsius. Check the mix every couple of minutes and stir with a wooden spoon to prevent burning.
  4. Take it out of the oven, slide off baking paper with edible soil onto a flat surface and set aside until cold. You can mix it with a wooden spoon every now and then to release the heat.

BUTTERSCOTCH WITH BASIL

  1. While the edible soil is in the oven, finely chop fresh basil and stir it into the butterscotch in a small pan.
  2. Bring it up to the boil and simmer for 2 minutes to infuse flavours.
  3. Take it off the heat and set aside to cool down to room temperature.

SERVING

  1. My suggestion is to serve it in a glass cups or ramekins
  2. Once the edible soil and butterscotch are ready, thin slice the bananas.
  3. Place half of the edible soil mix on the bottom of each dish, then the banana slices and drizzle with butterscotch and basil sauce. Top with a scoop of vanilla ice cream or some whipped cream and enjoy 🙂

NOTES

Bananas with Butterscotch and Basil
  • If you prefer more flavour and aroma, you can add more basil.
