Following our recent recipe, we’re continuing our ‘Asparagus session’. But before we jump straight into the recipe, let’s have a few words about the ingredients…

Apart from Asparagus, we’re going to use strawberries along with a few other ingredients, such as grapes, tarragon, black peppercorns and red wine. Wait, what? Fruits with Asparagus? Yes, you read it right! Asparagus, strawberries and grapes – an unusual combination that will let you enjoy those three distinctive flavours from a very different perspective.

Now, we wouldn’t class this dish as a dessert, it’s more of a sweet treat with a hint of savoury. Plus peppercorns, that give a bit of heat to the dish, and let’s not forget the tarragon – a wonderful, aromatic herb that lifts the whole dish to another level of deliciousness!

Warm Asparagus, Strawberry and Grape Salad

INGREDIENTS

  • 200 ml red wine (preferably Chianti)
  • 50 g granulated sugar
  • 10 asparagus spears, cut in half lengthwise
  • 8 strawberries, cut into quarters
  • 100 g white grapes, halved
  • 2 g black peppercorns, crushed
  • 1 g tarragon (about 10 sprigs), leaves taken off the stalks and finely chopped, stalks discarded

INSTRUCTIONS

  1. Take a pan and stir in the sugar with red wine, bring to the boil and reduce for about 12 minutes into a syrup.
  2. In the meantime blanch asparagus in boiling water for 2 minutes, then cool in ice cold water.
  3. Now take a bowl and throw in the asparagus with the rest of the ingredients (strawberries, grapes, crushed peppercorns & tarragon) and gently mix together.
  4. Pour in the hot red wine syrup, give it another stir, divide the salad into two portions and serve.

NOTES

  • You can cook Asparagus for shorter or longer time, depending how crunchy or soft you like it.
  • When making red wine syrup, keep an eye on it, it can burn quite easily while reducing.
  • If you like a lot of heat in your food, just add more crushed peppercorns.
  • If you prefer, you can replace white grapes with red grapes, or add both.
