The recipe for this dish is quite original and different, it was inspired by Tom’s trip to Spain a few years ago.
While in Barcelona, he visited La Boqueria, a large public market with a very diverse selection of goods. It was then when he came across for the very first time with the Pimenton de la Vera Dulce – Spanish sweet smoked paprika – and he fell in love with it, well, so did we, because he brought some of it back with him! and when it comes to Spanish cuisine is one of our favourite ingredients.
As we learned over the years, it is often used not only for the deep smoky flavour, which by the way is amazing, but also for its vibrant colour and that’s exactly what we were looking for when working on this recipe. It drastically changes the flavour of the whole dish, gives it an incredible depth and above all – it’s delicious!

Pollo en Salsa cremosa con pimento ahumado – Chicken in creamy sauce with Spanish smoked paprika

INGREDIENTS
- 2 medium sized chicken breasts
- Olive oil
- 1 garlic clove, thinly sliced
- 8 button mushrooms, cut in half and sliced
- 8 slices of courgette, 1 cm thick
- 100 ml white wine
- 1 tsp sage
- 2 tsp Pimenton de la Vera Dulce (Spanish sweet smoked paprika)
- 200 ml chicken stock
- 200 ml double cream
- Sea salt
- Freshly cracked black pepper
INSTRUCTIONS
- Slice chicken breast lengthwise. Splash olive oil into the pan and cook the chicken on a medium heat to brown on each side.
- Add garlic, button mushrooms and courgette, cook for a few minutes until soft.
- Splash in white wine and cook it off until reduced by half, then add the sage, Spanish sweet smoked paprika and chicken stock. Stir it all together and season with salt and pepper. Cook for 8 – 10 minutes.
- At the end, pour in double cream and cook for further few minutes until the sauce has thickened. Check the seasoning, add more salt and/or pepper if needed.
NOTES
Serving ideas: this chicken dish can be served with rice, new potatoes or even with Focaccia or toasted Ciabatta (which are perfect for dipping in that delicious sauce).
